Bolivian BBQ

"The best in the world"

sunny 85 °F

"Bolivia has the best BBQ in the world!!!" Carlos exclaimed with a huge smile and a gleam in his eye that told me he speaks from experience and perhaps a little bias. I was quizzing him on South America and specifically Argentina's reputation it has earned as a place to really pig out if you are a carnivore. This is right up my alley. "You MUST have Bolivian BBQ!" he told me. Well twist my arm. I just need to know 2 things. 1) When and 2) Where.

Carlos proceeded to tell me that Bolivians love to BBQ in the park. So with a stop by the market and the bank, neither of which take a small amount of time, Carlos dropped us off at an urban park at dusk. Great, if the carriage ride didn't leave us for dead, this would certainly be our undoing. We are in a Bolivian park at dark with Carlos doing his best to convince me that I am safe. Of course he is telling me that as he is leaving us all alone to pick up his wife and kids from his house.

I persevered through my fear by focusing on all the good meat Carlos would be grilling. I can play through the pain.

The kids, in typical fashion settled right into playing while Katie, Dave and I kept a close watch. Carlos, Shayla, and their two kids showed up in a few minutes to start grilling. Carlos is a true wizard on the grill. He packed the grill top with ribs, 3 kinds of chorizo, chicken (that came complete with head, feet and innards), and steak.

While Carlos grilled the meat to perfection, Dave got the kids playing with the head and feet of the chicken that Carlos cut off and had them doing push up contests. Anything to get the energy out.

The grill was jam packed with meat. As Katie said, "Meat, meat, and more meat. Fill the grill with meat! I feel like I am at the cottage". It was truly a sight to behold. Beautiful, only to be topped by sampling the succulent pieces upon completion.
